Mint Ice Cream
(makes 1 quart)
3 1/2 cups Half & Half
1/2 cup sugar
1 small box white chocolate instant pudding
1/8 tsp of Peppermint Extract
1/2 cup mint chocolate candies (Like Andes) chopped into pieces and frozen.
In medium bowl mix Half & Half, sugar, dry pudding mix and vanilla. Beat on high 2 minutes [If you want a green base for your ice cream add a few drops of green food coloring for the desired color]. Pour into ice cream machine and freeze according to manufacturers directions. [Check your machine directions prior to pouring ice cream mixture in. Most should be running to avoid mixture freezing to the insides]. 5 minutes before ice cream is finished add frozen candy pieces.
Mint Hard Shell Recipe
6 oz Mint chips
1/4 cup butter
1/4 cup vegetable oil
In glass or plastic bowl melt chips and butter in microwave. Be careful! 20 - 30 seconds intervals at a time. Stir between intervals. Melt just until smooth liquid. Add oil, stir to combine and pour over completely frozen ice cream. It creates a hard shell, just like the chocolate topper ice cream cone you can buy at Ice Cream Shops.
This also makes a great dip for frozen bananas or frozen cookies, use anyflavor of Chips you'd like!
